
🥘 1. Dal Tadka (Lentils with Tempering)
Ingredients:
- Toor dal (or moong dal)
- Onion, tomato, garlic, green chili
- Mustard seeds, cumin seeds, turmeric, red chili powder
- Ghee or oil
Method:
- Cook dal in a pressure cooker with turmeric and water until soft.
- In a pan, heat ghee, splutter mustard & cumin seeds, sauté garlic, onion, tomato, and spices.
- Add to the cooked dal and simmer. Serve with rice or roti.
🍛 2. Aloo Bhaji (Potato Stir-Fry)
Ingredients:
- Potatoes, mustard seeds, turmeric, green chili, curry leaves, oil
Method:
- Boil and cube potatoes.
- In oil, splutter mustard seeds, add curry leaves and chilies.
- Add turmeric, salt, and potatoes. Toss well. Done!
🍚 3. Vegetable Pulao
Ingredients:
- Rice, mixed veggies (carrot, beans, peas), whole spices (bay leaf, cardamom), onion
Method:
- Sauté whole spices and onions in ghee/oil.
- Add veggies, rice, water (1:2 ratio), salt.
- Cook covered until rice is fluffy.
🥒 4. Cucumber Raita
Ingredients:
- Curd (yogurt), grated cucumber, cumin powder, salt, coriander
Method:
- Mix all ingredients in a bowl.
- Chill and serve as a cooling side with rice or paratha.
🫓 5. Besan Chilla (Savory Gram Flour Pancake)
Ingredients:
- Besan (gram flour), onion, chili, coriander, turmeric, water
Method:
- Make a smooth batter.
- Pour onto hot tawa and cook like a pancake. Flip and cook both sides. Done in minutes!
